There are eight ice rinks in Vancouver. In fact, just about every RecCentre and many Community Centres have ice rinks, most of which operate during the fall and winter. Those I have listed here are the most centrally located. That doesn't mean, however, that you won't run into others as you explore the city.
If you happen to be on Commercial Drive, for example, you'll find a beautiful ice rink at the Britannia RecCentre, located at 1661 Napier Street, just a half block off Commercial Drive. And one of the best things about this ice rink is that it's open all year around so you can ice skate in July if you want.
